Method 1

Place the sharpening steel vertically on a non-slip surface. The knife tip should point upwards.

Now, guide the knife with light pressure from the bolster to the tip along the sharpening steel. Ensure your arm movement does not come from the wrist.

Method 2

Hold the sharpening steel approximately an arm’s length away from your body. Then, draw the knife vertically over the steel at a 20° angle.

Alternate drawing both sides of the knife blade, from the shaft to the tip, along the entire length of the steel.
